(60-90 days. Open-pollinated. Foeniculum vulgare) A.k.a. Finnocchio in Italy. This traditional strain of bulbing fennel grows well in a variety of conditions. Broad overlapping leaf bases form large bulb-like enlargements at the base of the stem. The bulbs have a mild, sweet anise flavor. Fresh, it makes a fine addition to salads. Chopped and sautéed, it’s great with shrimp. When cooked, it is an important ingredient in many traditional Italian dishes.
