(65-75 days) Bianca produces elongated, up to 7″ oval fruit, whose milky-white skin makes a stunning contrast with the deep green foliage of the sturdy, disease-resistant plants. Enjoy Bianca eggplant on the small side, at 5″ to 6″ long, about 3″ wide, when it is perfectly ripe, but seeds have not begun to form. Cut in thick slices, rub both sides with cut garlic and brush lightly with olive oil. Grill, turning frequently and serve as antipasto garnished with chopped parsley and capers. Bianca is also perfect for stuffing with savory fillings.
